Another Way to Rub Our Meat

In an earlier post, we talked about the importance of dry rubs and experimenting to find the perfect one for you.

Dry rubs pull moisture out of the meat.  This is a great way to cure your meat.  You can also use rubs that contain sugar as a way to create a protective “crust” on meats during harsher cooking methods.

Dry marinades usually consist of herbs, spices, salt and aromatics.  Rubs are usually put on shortly before you cook. The salt in the mixture acts as a carrier for all the ingredients.  Once the rub touches the meat, the cells draw the dry rub in.
